Special Recipe to pamper your loved one

Want to cook something special for your loved one. to strengthen the bond or rekindle old love. Chef Shailendra Bhandari, have some interesting recipes to share for the adventurous couples:

1)      ASIAN NOODLE & TOFU SOUP

Ingredients

  • 100 gm Egg noodles
  • 4 tablespoons olive oil, divided
  • 100 gm boneless and skinless chicken thighs
  • salt and freshly ground black pepper
  • 3 cloves garlic
  • 1 tablespoon freshly grated ginger
  • 6 cups chicken stock
  • 2 tablespoon hoisin sauce

For Garnishing

  • 1  green onion, thinly sliced
  • 50 gm tofu
  • 2 teaspoon  fresh cilantro leaves
  • 2 teaspoon fresh mint leaves
  • 1 jalapeno, thinly sliced
  • Lemon Juice- 2

Instructions

  1. In a large pot of water, boil egg noodles, drain well and keep aside.
  2. Heat 1 tablespoon olive oil in a large stockpot on medium heat. Season chicken with salt and pepper, to taste. Add chicken to the stockpot and cook until golden, about 2-3 minutes and keep aside
  3. Add remaining 1 tablespoon oil to the stockpot. Add garlic and ginger to it and cook stirring frequently until fragrant for about 1-2 minutes.
  4. Whisk in chicken stock in hoisin sauce. Bring it to boil; reduce heat to simmer for 10 minutes.
  5. Serve immediately with Egg noodles and chicken, garnished with onion, tofu, cilantro, mint, jalapeno and lime juice.

Sweet-nothings! Cup Cake

  • 00ml Milk (whole)
  • 115g Butter (unsalted)
  • 150g Unrefined golden caster sugar
  • 1tsp Vanilla extract
  • 120g Self-raising white flour
  • ½tsp Baking powder
  • 50g White chocolate chips
  • Egg(s) (free range)

For the topping

  • 500g Unrefined golden icing sugar
  • 160g Butter (unsalted) softened
  • 50ml Milk
  • 1tsp Vanilla extract

Method :

  1. Preheat the oven to 180°C (fan 160°C, gas mark 4) and line a 12 hole muffin tin with cupcake cases
  2. Pour the milk into a small saucepan, heat the milk until it’s just about boiling, stirring occasionally then remove from the heat before it boils. Leave to one side for the flavors to infuse for 30 minutes or longer.
  3. Cream the butter and sugar together until pale and fluffy.
  4. Add the eggs one by one beating after each addition. Then add the vanilla extract.
  5. Sieve in the flour, baking powder and the milk, having removed the star anise. Add the white chocolate chips and fold the mix together until combined.
  6. Spoon the mixture into the cupcake cases and bake for approximately 25 minutes or until a skewer comes out clean. The leave to cool on a wire rack.
  7. To make the frosting place the icing sugar and butter in a large bowl and using a freestanding mixer or electric whisk, mix on slow speed until the texture is sandy, then add the milk and vanilla extract and turn the speed up, mixing until is light and fluffy.
  8. Use a piping bag to pipe the frosting onto the cakes, and then decorate with some star anise or liquor ice sweets to finish or as per your choice of design.
